Year-long ageing period.
The grapes lie slightly north, providing the vines with additional cooling and later ripening. Carfeul bunch selection is required in the vineyards, as the juice is left to mingle with the skins for roughly 72 hours.
Fermentation occurs in stoneware, followed by a year-long ageing period with plenty of air in small, used barrels.
The wine boosts exciting notes, hinting herbs and a tremendous character! Can be paired alongside meats.
