These grapes stem from the Altweingarten site and are selected meticulously to insure the best quality fruit. In October, the grapes a hand-plucked and de-stemmed.
The juice begins its fermentation in a fermentation tank in a warm cellar and then finishes the process in a cold barn. The cap is pushed down a couple of times a day in order to mix the wine through and avoid the skins drying out. 10-14 days later, a single gentle pressing of the wine is performed before they mature in 225 litre barrels for 12 months. The wine is not filtered or fined, and a very small amount of sulphur is added.
On the butterscotch, spicy side... a dynamite wine!
Optimum drinking years are between 2020 and 2032.
Optimum drinking temperature are between 12 and 14 degrees.
