2019 Riesling Fuchsentanz
A pleasurable experience.
Time on the full yeast: 4-5 months
Time on the fine yeast: 2-3 months
Barrel time: 7 months
This riesling comes from a gravelly site on a Löss-rich Southern slope. The grapes are hand-picked in October and then pressed whole in order to conserve the lean and delicate character of the wine.
Spontaneous fermentation takes place in stainless steel tanks. This fermentation of the wine means that DIWALD's close relation with nature allows them to interfere as little as possible in the cellar. The wine is left until bottling occurs in Spring or early Summer.
Fuchsentanz is a composition of both cool and warm elements such as citrus notes (coming from the gravelly soil) and apricot aromas (from the löss). It is a dry riesling with high acidity.
Preferred drinking temperature is 8 to 10 degrees.
