The vineyards are located in the village of Milly, specifically "LES CHARLEVAUX", between the Vaillons and the Côte de Léchet vineyards. The grapes, which face west, are pruned using the Double Guyot method and harvested by machine.
After pressing, cold static setting is carried out for 12 hours. Fermentation occurs in temperature-regulated stainless-steel tanks with selected yeasts and no added enzymes. Malolactic fermentation is then proceeded to lower the wine's acidity. Thereafter, the wine is aged for 8 months in stainless steel tanks and after fining, the bottles are chilled.
Characterised by fruit (citrus and white fruits) with hints of minerality. Its old vines of 45 years contribute to the balance and complexity of Chablis.
